chocolate genoese
A light chocolate sponge soaked with booze and filled in three layers with dark chocolate mousse and fresh seasonal berries covered with a dark chocolate ganache - can be alcohol free or vegan on request.
vanilla genoese
A light vanilla sponge soaked with booze and filled in three layers with a white chocolate vanilla mousse and seasonal fruit or homemade jam filling covered with vanilla chantilly - can be alcohol free on request.
madeira cake
like a traditional victoria sponge but better!
made with a hint of lemon and a handful of ground almonds it is filled in three layers with vanilla/lemon butter cream and jam or lemon curd - can be left gloriously plain, draped in chocolate ganache or covered with marzipan and icing in the traditional way.
moist lemon and almond cake
a very rich and moist cake filled in three layers with fresh seasonal berries or lemon curd and a vanilla mascarpone filling - can also be gluten free on request
carrot cake
a rich and moist spiced cake made with freshly grated carrot, walnuts and raisins filled in three layers with cream cheese frosting and decorated with pistachio slivers and dried baby figs
lavender cake
lavender scented victoria sponge filled in three tall layers with vanilla cream cheese frosting and jammy plum compote decorated with frosted almonds
boozy fruit cake
a dark and rich traditional fruit cake full of spice, nuts, dried vine fruits, cherries, figs, pears and candied peel covered with marzipan and fondant icing it looks especially impressive decorated with sugar flowers - due to the nature of this cake, the necessary careful maturing and soaking in brandy we require a minimum of three weeks notice
Wedding cakes can be made in a chocolate or vanilla genoese as described in 1, 2, 3 or even 4 tiers.
Due to the use of fresh cream and berries these cakes do not travel well, like to be refrigerated when not on display and are best consumed within 3/5 days.
Wedding cakes are beautifully decorated with jewel-like berries, handmade chocolate curls and fresh or crystallised flowers.
The alternative option for a wedding cake is the madeira or rich fruit cake covered in traditional marzipan and fondant icing.
These cakes make stunning display pieces, they look beautiful decorated in assorted sugar flowers and leaves in simple white and pale pastels or more quirky and bold colours.

A 50% deposit is required on placing all large orders with the rest to follow on delivery. There is a £15 delivery charge within and around the Brighton and Hove area. Deliveries further afield are possible so please enquire. As we are as yet a small, growing business we are unable to accept any form of card payment. Cash and cheques are most appreciated.
